
For those of you luck enough to have a home ice cream maker, here is a great summertime recipe to "use up" some leftover berries. (If you don't have a machine, here is an excuse to get one!) Save some for sprinkling on top though!
1 1/2 c BERRIES
Fresh berries can be whole raspberries or blackberries or quartered
strawberries, or any combination.
In bowl combine 1/2 cup berries and 2 T sugar. Mash well. Add remainder of berries and stir. Let stand while mixing ice cream. In
separate mixing bowl, combine milk, half and half, whipping cream and 2/3 cup plus 1 T sugar.
Freeze according to manufacturer's instructions. When frozen, stir
berries into ice cream, then pack into glass or metal dish and harden in
freezer at least 1 hour.
Per serving: 339 calories; 50mg sodium; 96mg cholesterol; 17g fat; 24g
carbohydrates; 3g protein; 0.69g fiber.
